I was so proud of myself. I found a new recipe on Pinterest (of course) that sounded delicious, nutritious and easy. That's the key word here. EASY. As a working mom, who has a crazy schedule (anchoring 2am to 10am- then teaching in the early afternoons everyday except Thursday- then taking on the role of chauffeur to get my kids to and from all of their activities) I look for the quickest dinners I can make for my family. Now, I'm not saying I don't order the occasional pizza (Pizza Fridays, anyone?)- but during the week- I like to have a homemade meal for my kids (healthier and cheaper!). The thing is, if it's not pasta... the response is usually "Gross! What IS this?!" But I don't let that deter me! So, I found a recipe for "Harvest Chicken"...

a one skillet meal... fewer dishes = even better. Check the picture- it looks delish, right?! Now, I knew the brussel sprouts were going to be a hard sell... but, come on, there's bacon in there too! (turkey bacon because that's really not a game changer for me) There are even apples in the dish-- my twins love apples. Didn't matter. My oldest son, on the other hand, is open to trying new dishes... even though he will say "Please don't tell me it's another Pinterest recipe!" (because he knows it will be something new) The twins, though, don't like to try anything. As a parent, I feel it's my job to MAKE THEM try new things. LOL. The deal is- they have to at least try a bite- and actually chew and swallow that bite. My oldest, God bless his soul, ate the Harvest Chicken. He said it wasn't his FAVORITE... but it was just all right. I'll take it. As for the twins, the rule is, if you don't like that bite of dinner, don't expect Mama to make you another dinner. Oh no. They can eat Cheerios. And that's what they ate that night. Cheerios. Choose your battles, people. My kids are fortunate. They're not going to starve. I want them to understand that. I want them to appreciate the fact that they have a warm meal for dinner every night. (well, most nights!) So, cereal for dinner it is. Now... I wonder how they'll feel about my next Pinterest meal.... Salsa Chicken Bake!
